kumquats & honey

homemade kumquat & honey marmalade
original recipe here

about 18 kumquats
2/3 cups honey (i used slightly less than 1 cup as i wanted it sweeter)
♥ 1 cup water

i also added:
♥ a few cardamom seeds
a cinnamon stick

clean the kumquats and prick them in a few places with a toothpick.
bring a pot of water to boil and add the whole kumquats.
let it simmer for 15 minutes, drain and allow to cool a little bit.

thinly slice kumquats and remove seeds. place the  honey & water in a small saucepan.
heat over medium flame, stirring occasionally, until the honey has dissolved.

add the sliced kumquats to the pan (cardamom & cinnamon too, if wanted).
let it simmer uncovered for 30 to 45 minutes, until the mixture has thickened up.

remove pan from heat and scoop the marmalade into a little hot, sterilized jar,
leaving half an inch of air between the marmalade and the lid.
wipe the rims, close it and place it in hot water for about 10 more minutes.

once cooled, scoop some on a freshly made scone
and enjoy it with a cup of tea and a good book.

just a minute in august

i missed just a minute in july due to work
but then again, i didn't had much to tell.

i'm having a bit more time now and i'm taking pictures again
enjoying some time outdoors, too. balance is always a good thing
reading the secret garden, frances hodgson burnett
watching sto dney posle detstva (aka one hundred days after childhood, prettiest title ever)
loving them so, so much
making plans, so many plans
wearing all shades of pink. i never wore this much pink
sewing little presents

hope you have a lovely day

pixel is one year old today ♥
he was so tiny when he first came home, ten months ago

he's a little devil and we love him lots because of it,
so sweet and cuddleable.

the slow weekend

waking up early and listening to the birds sing under our window,
eating fruit for breakfast and french toasts for lunch,
reading books on the couch under the warm sunlight,
making little stitches in old, forgotten projects,
dancing around, baking bread and taking naps with pixel.

this is the first weekend in two months that i didn't had to work at all
it feels good.

hope you had a great weekend, too ♥
